Gluten and wheat in diets seems to be getting a lot of attention these days, but do you know what it is?
Steven Yafa, author of “The Grain of Truth; the Real Case for and Against Wheat and Gluten” talked to WISR’s Dave Malarkey about Gluten and Wheat. He even mentioned a popular nighttime T.V. show that asked many individuals what they thought Gluten was. Not very many people knew.
Yafa said, “It’s a combination of two proteins that are found in the seed, wheat seed in particular, and they are gluten and gliadin, and they account for the extensibility and the elasticity that creates the air bubbles in bread. So, when slice through the bread and look at the interior, which bakers call the crumb, you’ll see big pockets of air which allows the bread to rise.”
Many individuals who have gluten intolerance are very careful with their diet, while others prefer to eliminate Gluten from their meals.
